Grilled Artichoke and Sausage Sandwich

Grilled organic Artichoke (from Full Belly Farm CSA box) with dipping sauce (canola mayo., lemon juice, flaxseed oil, minced red onion); grilled Diestal cranberry apple turkey sausage on white bread (storebought); homemade organic wholewheat banana carrot muffin; Sigg bottle filled with soymilk (not shown). Both the sandwich and the muffin were wrapped in the bandana.  The artichoke container has a lid.

Do your children typically eat all that you send? Just curious as to the acceptance of your lunches. They are just terrific.

Yes, but I only pack for my oldest, Aidan, who happens to be my best eater. I would say 90% of all the food I pack is eaten. Sometimes, for instance with the asparagus quiche, he will pick out what he doesn't like (in that case, asparagus) and eat the rest. When he returns home I will be given a brief diatribe describing, in detail, what food is unacceptable for the lunchbox and why I should stop trying to sneak them into foods he likes. I then try to behave for at least a couple of weeks.

That said, I know what kinds of food he likes and try to pack those things 90% of the time, that way when the stuff he's unsure about comes up, he's more likely to give it a try. It helps that he has a great appetite. If I sent the exact same lunches to school with my daughter (she's still in preschool) I'd probably have a 90% RETURN rate, she has very little interest in eating. . . Oh yes, and thank you for such a nice compliment!

I like the idea of grilling artichoke hearts - I hadn't thought of that! And the carrots are so cute with the little tops.
