Baked French Toast

Baked french toast strips made using homemade oatmeal bread with maple and agave syrup dip; organic raw almonds; organic strawberries.

This was served as last night's dinner (chopped almonds served on top of the french toast and sliced strawberries on the side) along with organic asparagus spears (from Full Belly Farm) wrapped in small strips of bacon.  The asparagus did not make it into lunch because my children hate it, even when wrapped in a fabulous piece of crispy bacon.

waste generated: one square of parchment paper

Looks awesome. Your blog inspires me! My son loves french toast sticks and making a homemade oatmeal bread sounds like a great way to make them.

Is maple & agave syrup dip a commercial product? Or something you made? As weird as my kids are they would eat a shoe if it was wrapped in bacon. How lucky for you that your's don't!

Thanks!! The oatmeal bread recipe came from Beatrice Ojakangas' Great Whole Grain Breads book (not that you were asking, but it is a GREAT cookbook and I love this particular recipe because it uses up leftover cooked oatmeal).

RE: Maple/Agave syrup. This one developed out of necessity. I had a stack of French Toast and was low on Maple Syrup so I mixed it with the Agave I happened to have in the fridge.

FYI: So much for my bacon trick. I was hoping to work my way up to shoes. . .

Thanks for the information about the oatmeal recipe source. I actually did look up several recipes but couldn't quite guage what makes one better than another. I have the La Brea Bakery and Julia Child's Baking cookbooks somewhere, so I'm going to start there. btw, the maple and agave syrup looks yummy too.
