Turkey Sandwich, But Of Course


I have returned from my respite, although, as you can see, not exactly spilling with creativity. The classic turkey sandwich lunch: turkey sandwich on homemade organic honey wholewheat bread with orange cranberry sauce, canola mayonnaise and sage chestnut stuffing; berry pie; sliced raw organic cauliflower and carrots. Fingers not included.

Dissolve 4 1/2 t. of yeast in 2 cps of hot water (b/x 105 and 115 degrees). Don't use the super fast yeast with this bread! Add 1/4c. softened butter, 1/3c. honey, and 2 t. salt. Once yeast has begun to foam add 2 c. whole wheat flour (Bob's Red Mill White Whole Wheat Flour is great) and mix until you have a smooth batter. Cover and let sit for 30-40mins. Slowly mix in an additional 3 to 3 1/2 c. whole wheat flour. Let rest for 15-20 mins. Knead dough until smooth and elastic. I use an electric mixer with dough hook and it takes about 10-15 mins. It will be pretty sticky, but if it is too sticky add a touch more flour (but be careful - too much flour will make the bread too dense and not soft - -another 1/2 c should be fine). Place dough in a greased bowl, cover and let sit and rise for 1 1/2 hours. Divide dough into two greased loaf pans (kneading and reshaping to fit pans). Allow to rise for another hour. Cook at 375 for about 25 mins. I hope it turns out delicious!
