(or one package) of dry yeast on top. Add a tiny pinch of sugar to feed the yeast.<BR/><BR/>Once yeast has begun to foam add 1/4 cup canola, safflower (or other oil with high burning point) and mix at medium speed. <BR/><BR/>Whisk together:<BR/>1 1/2 cups unbleached AP Flour<BR/>1 1/2 cups Whole Wheat Flour<BR/>1/4 cup wheat germ<BR/>1 t. salt<BR/><BR/>Slowly add the whisked mixture to the ingredient in the bowl, mixing with dough hook until it is fully incorporated. Continue to run machine (kneading the dough) for another 5 minutes on medium speed. Dough should be elastic and not super sticky. If too sticky add a touch more flour and knead for a few more minutes.<BR/><BR/>Knead by hand for a minute or so and form into a round smooth ball. Wash and oil bowl and place ball back into bowl turning it to coat with oil. Cover and let sit for 1 1/2 hours, or until doubled in size.<BR/><BR/>Punch down and shape.
